Vanilla Vixen Cakes

This is a fab recipe, a real 5 minute wonder because it is an all in one recipe. What you get out of the oven is a fabulous lady without her make-up on yet- like me these are made to be made up! So, what look are we going for today- sexy chocolate buttercream, remember boys, the ladies love chocolate, or a luscious lemon mascarpone or a perfectly suited vanilla buttercream, ooh or a vanilla cream cheese icing! Oh God- is it possible to be lusting after a bowl of icing more than a naked man? ………..Yes apparently. Now then, let’s get it on!

Vanilla Vixen Cakes
  • 100g self raising flour
  • 100g soft butter, room temp
  • 100g egg, that’s 2 medium eggs
  • 100g caster sugar
  • 1 tsp of vanilla extract, or seeds of 1 pod
  • ½ tsp, level not heaped of baking powder

Get your bowl and place it on the weighing scales, remember to re zero before you put the ingredients in! Weigh up all the ingredients into the mixing bowl, make sure to sieve all the dry ingredients together, it saves you from lumpy batter, and the butter must must must be soft but not liquid, it is one thing we don’t like stiff! Mix the ingredients together just enough to get them together- if you over mix it the gluten will develop in the flour and the cake will be tough, we don’t like that. This mixture makes 12 fairy cakes, so put 12 little paper cases into a cupcake tray and put a small ice-cream scoop or roughly 30g in each case and bake at 190C for 15 minutes or until a tooth pick comes out clean  Pop them on a cooling rack and choose an icing to pipe on when they’re cold.
