This recipe is so cute! You can put any chocolate you like in but I like the white chocolate with the strawberry on the top, you could use any berries though, whatever you’re into! Also it’s a one bowl one mug quickie- minimal clean up = more play-time, we like this!
- 140g cream flour
- 7.5g baking powder
- ¼ tsp baking soda
- Pinch of salt
- 75g caster sugar
- 1 small egg
- 110g milk
- 45g corn oil
- 5mls vanilla extract
- 75g white chocolate chips/ chopped
Makes 36 mini muffins
Preheat the oven to 200C.
Weigh out all the dry ingredients into a sieve over the bowl.
Add the chocolate chips or chopped chocolate into the dry ingredients.
Weigh out all the wet stuff into a mug or glass and give it a beat with a fork.
Add all the wet ingredients into a well in the centre of the dry ones and fold through.
Using a teaspoon or piping bag, fill all the cases to the top and bake for 15 minutes at 200c or until golden and spongey. (You gotta try one while they’re still hot!)
Allow them to cool right down and then get creative!
I would recommend a vanilla buttercream, maybe dyed pink, with half a strawberry on top, boom! Love it!
