Cherry and Dark Chocolate Muffins

These are so deliciously naughty and rich… do they have a brother for me?! I also think that filling them full of alcohol before you have your way with them makes them even better- so I sometimes brush them with a little bit of kirsch when i take ‘em outta the oven, they’re Black forest gateau muffins if you just pop a bit of cream on top then, but ganache and a cherry make a lovely topping and keeps that richness intact, but why not do both, you may as well spoil yourself!

  • 225g Cream flour
  • 10g Baking powder
  • 2.5g Bread soda
  • Pinch of salt
  • 50g Cocoa powder
  • 170g Caster sugar
  • 100g Dark Chocolate chips
  • 100g dried, canned or fresh pitted cherries chopped roughly
  • 1 egg
  • 250g Milk
  • 5ml Vanilla essence
  • 90g Sunflower oil

So follow steps 1 to 5 of the Erotically Delectable Chocolaty Muffins and then fold the cherries in half way through the mixing.

Using an ice cream scoop or spoon carefully divide the mixture out making sure that there isn’t too much chunks in some and not enough in others, it would be cruel to make some of them inferior!

Pop them in the oven at 200c for about 20 minutes or until spongy to touch. Pinch one to ‘test’ while they’re still hot!

Then allow the rest tk cool, remember to dab on the kirsch if you’re going to or get going on that ganach! Call the girls over and flick the kettle on- these are too good not to share!
